- Study design
- Acute randomized crossover study, with separate rice and potato groups.
- Who took part
- Two groups of 24 healthy adults.
- Studied preparation
- Cooked lentils replaced half the available carbohydrate from rice or instant potato; meals supplied 50 g available carbohydrate.
- Compared with
- Rice alone or instant potato alone.
- Time frame
- Single-meal, postprandial testing.
- What was measured
- Postmeal glucose and insulin responses.
- Reported finding
- All three potato–lentil mixtures lowered measured glucose response versus potato alone. Rice results varied with lentil type.
- Uncertainty
- The abstract does not provide confidence intervals for these contrasts. Lentil type and the food replaced matter.
- What this cannot tell us
- An acute glucose response in healthy adults does not establish long-term disease prevention. Half the carbohydrate is not necessarily half the meal by weight.
Is this an addition, or a substitution?
Draw the two meals before comparing their results. A study that replaces one ingredient answers a different question from a study that simply adds another food.

The Journal of Nutrition, 148(4), 535–541. Two groups of 24 healthy adults compared rice or instant potato with mixtures in which lentils supplied half the available carbohydrate. All three potato–lentil mixtures reduced the measured glucose response relative to potato alone. Rice findings differed by lentil type. An acute response does not establish chronic disease prevention or an individualized dietary prescription.
