Meet the plant
Kew accepts durum as a subspecies of Triticum turgidum in Poaceae. Older sources may use Triticum durum. The plant profile does not identify every cereal used in couscous or a mixed-grain product.
Read it in context
Follow the linked place folio to see how its sources name ingredients. A botanical profile and a cultural account answer different questions; broad ingredient names are kept broad when identification is uncertain.
A note for your own card
Read the grain name before comparing preparations. When keeping a family version, record who taught it, the ingredient as they named it, and any later changes.
