Meet the plant
The part of Zingiber officinale used in the kitchen is a rhizome: an underground stem. It is often called ginger root in everyday cooking language.
At the kitchen table
Grated ginger disperses through a soup or dressing; slices are easier to remove from a liquid after steeping. Dried ground ginger is another preparation, so a direct spoon-for-spoon substitution is not a neutral change.
A thread to follow
The carrot soup gives ginger a culinary role alongside onions and carrots. Claims about concentrated ginger products require their own evidence and should not be inferred from this recipe.
