A name with a wider scope

Kew recognizes Triticum as a genus in Poaceae, the grass family. This card introduces the genus rather than identifying every flour as one species.

Our separate durum-wheat profile concerns a more specific taxon. A recipe that simply says flour, wheat flour, bread or bulgur does not by itself identify its botanical source.

The connected recipes name different starting materials: flour for a loaf or griddle batter, bulgur for a salad, and pasta for the saucepan. Keep the author’s specified form and quantities with the preparation.

The ear-of-grain drawing is an original decorative symbol shared with the durum card; it is not an identification diagram.
